Lime Chicken and Lentil Chili

Recently made this for a Chili Cook-off and it went pretty well :) Please enjoy! I used Lentils instead of beans....because I'm not a fan of a TON of beans. So give it a try :)

Lime Chicken and Lentil Chili

Ingredients
Olive Oil
2 pounds Chicken Breast(white or dark, your choice, chopped)
1 green bell pepper, cored, seeded and chopped
1 medium yellow onion, chopped
1 teaspoon basil leaved
2 tablespoons ground cumin
1 teaspoon dried oregano
Salt to taste
2 bay leaf
2 Limes
1 can of Tomato Paste
1 (4-ounce) can diced green chiles(Goya Brand is good!)
1 small jalapeƱo, seeded and finely chopped
3 cups low-sodium chicken broth
2 cups of Green or French Lentils(Soak in hot water for 45minutes)

Heat some olive oil in a large pot over medium high heat. Add chicken(You can salt and pepper to taste) juice of one lime, and cook, stirring often, until browned. Transfer to a bowl to add Later. Add some more olive oil into the pot, bell pepper and onion and cook until softened and golden brown. Return Chicken to the pot and add basil, cumin, oregano, Juice of one lime and salt. Stir well to combine. Add bay leaf, tomato paste, chiles, jalapeƱos and broth, reduce heat and simmer, uncovered, 45 to 50 minutes. Stir in lentils and cook for 30-45 minutes more. Serve with whatever condiments you would like :) Enjoy!
